While I work on a smoky quinoa sloppy joes recipe, here is a delicious Indian version. Pav bhaji. Pav is fluffy buns. Bhaji is veggies cooked in a spicy tomato base. These sloppy burgers are lentil-free.
The masala blend used in this vegetable stew is called Pav bhaji Masala. It can be found in Indian stores or be bought online On Amazon- MTR or MDH brand). or hopefully soon on my etsy store. I need my Mum’s help intervention. She makes some fantastic masalas from scratch.
And as the story goes… There was once a tired gal, who went to get her some answers about her machine color woes. And to her dismay found out, that the display is sooo new technology, that it cannot be calibrated to a color selection that she is comfortable with. So she had to return the beautiful machine to the overcrowded pretty store and start her search from square one.
I couldnt live with my lettuce looking like the florescent green on the construction zone signs. It didnt help that the mac store geniuses were borderline rude and constantly trying to sell me random training membership that I did not need( almost 20 times). I was quite offended by their we know all attitude. Stay away from the Retina display until it can be calibrated and stay away from the University district Apple store.
The bhaji is a tomatoey Vegetable stew. The buns that I used for the pictures are whole grain burger buns. Pav buns are soft white like these super Soft buns. Pav bhaji is a common street side food, usually served on a plate with shallow fried buns on the side. The garnish is some fresh crunchy onion, cilantro, lemon juice/wedges and dollop of butter on top. I use extra virgin olive oil or earth balance buttery spread for the buttery effect. Use your fave gf bread/buns to make this dish glutenfree.
Bhaji – Vegetable stew
Gluten, Soy, dairy, egg, nut, corn, free.
Cook time: 35-40 minutes. Makes 3-4 servings.
2 teaspoon organic canola oil or earth balance butter
1-2 green chilies chopped
1 Tablespoon ginger garlic paste (grind half an inch ginger and 3-4 cloves of garlic with a little water or oil)
3 medium tomatoes chopped
1 medium potato, boiled and cubed
1 cup chopped cauliflower
1/2 cup chopped green bell pepper
1/4 cup peas
2-3 teaspoon Pav bhaji masala(or use garam masala + 1/2 teaspoon raw mango powder)
1/4 cup chopped cilantro
1/2 medium onion chopped
a few teaspoons of Extra virgin olive oil or Earth balance non dairy butter
lemon juice to taste
Add oil to a medium sized deep pan and heat on medium.
Add green chilies and saute for a few seconds then ginger-garlic paste. Stir-fry for half a minute.
Add half the tomatoes and cook on medium heat for 4-5 minutes, stirring continuously till oil separates or tomatoes are mushy and cooked.
Add bell pepper, peas, cauliflower, potatoes ( and other veggies of choice, carrots, green beans) and 3/4 cup of water.
Bring it to a boil and simmer for ten minutes.
Mash the veggies lightly and add Pav bhaji Masala, salt and tomatoes.
Mix, taste and adjust salt and spice.
Cook on low for 3-4 minute until the stew becomes thick.
Prep the Pav/buns. Spread a little earth balance or extra virgin olive on on the cut sides and toast on pan on medium heat, until brown on the edges.
Make your own Pav buns or use some burger buns.
Serve the bhaji stew with the buns on the side, and bhaji garnished with cilantro, chopped onion and lemon juice and a thin slice of earth balance or a drizzle of evoo.
Or serve as Sloppy Joe burgers, Toasted buns with greens topped with hot bhaji, then cilantro, chopped onion, lemon juice and a drizzle of evoo. Sprinkle a bit more Pav bhaji masala to taste.
This bhaji is being shared at Slightly indulgent Tuesdays, Hearth and soul blog hop, Allergy friendly wednesdays, Ricki’s wellness weekend,

Indian sloppy joes is a great idea!! Though I’m reluctant to foods that goes soggy 😀
Awww..too bad they’re still giving you trouble! Drown your sorrows in that delicious bhaji, works for me :))
oh wow, that sounds amazing! i’m drooling over here! haha
This is a seriously delicious looking sloppy joe! I always liked sloppy joes when I was younger and I keep thinking about making a vegan version, but haven’t really felt the motivation until now. Indian Sloppy Joes- genius!
Your mind works in amazing, mysterious ways! I’ve only made traditional (vegan) sloppy joe’s twice in my life, but I would certainly make them more often if they had flavorful spices like this rendition. It sounds so much more exciting than the standard approach.

This looks so tempting…
How simple, yet why didn’t i put pav and sloppy joe togather?
Oh my gosh, I love how messy this would be to eat!
and thats why the name 😉
I love sloppy joes and I LOVE Indian food, so these look perfect to me!
I like the twist you gave to the traditional pav bhaji. I am surprised as your experience. I use every single apple product and neer really faced any issue at all. So sorry to hear about the trouble you had to go through!
i have a lot of apple products too. all the small gadgets. i will give a mac pro with the old screen a try befoe swearing off the big machines.
i never had any color problems ever, its the new chip which caused the problem with a samsung and made me develop a keen eye. but the retina display is ridiculously different.
This sounds so delicious, Richa! I haven’t had a sloppy joe in the last two years probably, but this sounds so much better than the soy based ones I remember eating.
Thanks Shannon!.. no soy in this one.. and its a change from the usual ones too.
well despite your computer troubles your recipe and photograph are glorious!
Thanks India-leigh 🙂
These look incredible! I am totally going to try these out once I can find that spice. My husband would love these. Sorry about your computer troubles! I hope you figure it out soon. 🙂
Thanks Melissa. let me know when you do!
even here the apple staff is way too aggressive… recently i came to know that they remove some parts, add some indian or chinese parts and sell their laptops here… all this happening in an apple store.
pav bhaji is one of my favorite snack food and even i have veganized it completely… no butter on the pav or bhaji for me now 🙂
seattle is a creative and software hub. so their assumption that i didnt know what i was talking about, was annoying. I has a colorimeter and pictures on other machines to prove the color problem. the supervisor apologized later when i told her how inefficient and unacceptable my experience has been and returned the machine.
i am super happy to hear about your house getting free of butter!!:) hugs!
What a fun idea – vegan sloppy joes! They sound divine!
i grew up LOVING sloppy joes. i love this indian version. they look saucy and delicious!
they are saucy indeed.. be ready to lick your fingers;)
Sunday Morning Banana Pancakes
This is such a fun recipe! I haven’t had “sloppy joes” in forever, I am thinking I need to make some tonight for dinner 🙂
….I would be so frustrated by now too if I had your computer issues, I do have to say I LOVE my HP Desktop, the colors and white balance are incredible and the images on teh screen are so crisp – I am by no means a computer or techie girl Justin does all the research and purchasing so I couldn’t tell you what we have but could certainly find out for you 🙂
you need to make these 4 sure!:) I wanted to replace my laptop as i hardly use the desktop and i havent had any problems with 6 other machines i have used till date:) we will find a good one some day:)
Gabby @ the veggie nook
You know, I have some of that spice sitting in my pantry right now! Thanks for the brilliant ide aon how to use it 🙂
I am surpprised you have some!:)
It looks so delicious! Very inspiring!
I’m surprised to hear a bad review about apples customer service… I always hear people raving about how good their customer service is… I had no idea that retina display would have such serious color issues…
I love Pav Bhaji and this one looks very tempting. 🙂
the products are usually very functional out of the box, so most service is needed for either simple things, which usually get easy service.. or major problems which dont happen as often.. this was a very specific problem and they failed at connecting me to the right person. they will remember my face at the store for a few days:)
this is good!!
