Cook quinoa and set aside. Add other ingredients to a heated skillet. Cook until the spices and sauces cover the lentils completely and the mixture thickens.

After cashews soak in water, drain them and add to blender. Blend until mixture is thick and creamy. Transfer to bowl and set aside

Add peppers and onions to a heated skillet and cook until golden on some of the edges. Set aside and repeat with mushrooms.
