CHICKPEA VEGGIE LOAF

with spices and a spicy bbq glaze

This loaf is easy and quick prep if you have cooked/canned chickpeas. It is inspired from my Lentil Quinoa Loaf. This is a great loaf for anyone who finds lentils too earthy.

–  red onion  – garlic – celery or use other veggies –  red bell pepper or carrots or both – dried cranberries optional – chickpeas –  cannellini beans or other white beans or use more chickpeas or cooked lentils – breadcrumbs

To make a vegan loaf, sauté onions, garlic, celery, peppers, and cranberries. In a food processor, blend chickpeas, beans, herbs, and half of the cooked veggies.

Transfer to a bowl and mix in chia seed meal, BBQ sauce, spices, tahini, breadcrumbs, and leftover veggies. Adjust seasoning. Shape the mixture into a loaf or balls and top with glaze.

Bake at 400°F for 20 minutes covered, then 15-25 minutes uncovered. Cool, slice, and serve with desired sides.
