Mushroom and Lentil Shepherdless Pie with Gravy and Garlic mashed potatoes

This Delicious Lentil Mushroom Shepherdless Pie. Garlic mashed Potatoes over mushrooms, onion, lentils, veggies mixed with a bit of gravy, baked, then served with more of my 1 Pot gravy!

–brown lentils  – peas – Vegan Gravy  – bbq sauce or 2 tsp tomato paste (optional) – black pepper to taste – extra virgin olive oil and thyme for topping

To make a vegan shepherd's pie, prepare mashed potatoes and vegan gravy. Preheat the oven. Pulse or chop onion, garlic, and mushrooms. Sauté the mixture with salt and oil. Add carrots, celery, other veggies, herbs, and salt. Cook a bit more.

Alternatively, bake the onion-mushroom mixture, then add the rest of the veggies. Fold in lentils, peas, BBQ sauce, gravy, and black pepper. Adjust seasoning. Layer mashed potatoes on top and smooth them out.

Drizzle with olive oil and sprinkle with thyme and pepper or garlic breadcrumbs. Bake, broil for browning, and let cool briefly. Serve with gravy or desired toppings. Leftovers can be refrigerated for 4 days.
