A simple, flavorful, addictive South Indian Potato Pepper Stir-fry with black pepper and a simple tempering /tadka. Serve this easy vegan dish with Dals, sambar and rice, flatbreads, or dosa. Or just eat up as is! So good and gluten-free!

Heat saucepan of water. Then add in your potatoes and dry spices. Bring to a boil.

You don't want the potatoes too soft but you want them cooked through. Drain the potatoes and set aside.

Heat the oil, add the remaining ingredients. Add splashes of water, add potatoes, and toss.
