Mix the yeast and non dairy milk. Let sit. Add sweet potato puree and flour. Whisk it.

Add oil, flour, and herbs. Add in flour slowly and make a lightly sticky dough. Cover and let rise until doubled in size.

Divide the dough into 8 equal parts. Place in a greased cast iron skillet, brush with oil and bake at 385 degrees F.
