CLUB SANDWICH WITH TOFU COLD CUTS

This is THE Summer Sandwich! It is easy and refreshing with lots of fresh, crunchy veggies — lettuce, cucumbers, and peppers — and a quick tofu deli meat which has a ton of flavor. It is super simple.

Press, slice tofu. Grease baking dish or line with parchment paper. Place tofu slices closely in dish. Mix marinade ingredients, adjust water for brushable consistency. Generously brush tofu slices with marinade. Bake tofu until marinade dries somewhat.

While tofu bakes, prepare other components. Slice vegetables thinly. Optionally, toast bread/sourdough with or without vegan butter. Create vinaigrette by mixing all ingredients in a small bowl and keep aside.

Assemble the sandwich: Spread mayo on bread slices, add cheese if desired. Layer half of lettuce, peppers, onions, cucumber, tomato on bread. Add tofu slices, then rest of veggies. Drizzle vinaigrette over or toss veggies with it before layering.
