Boil, peel, and cube potatoes if not done. Heat skillet over medium heat, add oil. Once hot, add cumin seeds and toast till fragrant. Add green chilies, then ginger and mix.

Add ground spices and salt to skillet, mix. Add cubed potatoes, toss to coat. Add lemon juice, fenugreek leaves, cover, let cook 1-2 mins for spice infusion. Uncover, add cilantro, mix, remove from heat. Serve as is, breakfast potatoes, side dish, in wraps/sandwiches, or as Chaat snack with onion, tomatoes, cilantro chutney, or lemon juice on top.
