Prepare peanut sauce: Combine all sauce ingredients in a medium bowl, mix well. Add hot water as needed for desired drizzling consistency. Alternatively, blend in a small blender with garlic and ginger.

Cut pressed tofu into rectangles or squares. Mix 1/4 cup peanut sauce with cornstarch. Coat tofu in this mixture. In a shallow bowl, place sesame seeds and coat tofu sides/top. Place on parchment-lined baking sheet. Preheat oven to 400ºF (205ºC). Bake tofu for 20 minutes, check at 18 minutes, bake for 2-4 more if needed.

Take tofu out of the oven and keep aside. Arrange greens, bell peppers, cucumber, peanuts, etc. in a bowl. Add baked tofu. Drizzle with peanut sauce and serve.
