Preheat the oven to 400 degrees F and process cauliflower and coriander seeds in a food processor. Add chickpeas, zaatar, tomato, cilantro, salt, garlic, ginger, flax eggs, onion, pepper flakes, oil, taste and adjust salt and spice, shape into patties, freeze for 10 minutes, pan fry for 3-4 minutes each side, and serve with caramelized onions, hummus, mayo, ranch, and other toppings.
