Mix ingredients in a bowl, press miso, sugar, and mix until well combined.

Heat a skillet over medium-high heat, add oil, onion, salt, sugar, and cook until golden. Add ginger, garlic, and green chili, and cook for 7-10 minutes. Deglaze with water if needed.

Add lentils, brown sugar, soy sauce, and mixed dressing. Cook until thickened. Taste and adjust flavors with salt or lime zest. Remove from heat when lentils stick.
