Ingredients
20 ozcan jackfruit
1medium onionroughly chopped
8clovesof garlic, more the merrier
1tbspoil, olive or safflower
1/2tspsalt
Flavoring:
2tspor more paprikai use 1 tsp smoked and 1 tsp sweet paprika
2tspsoy sauce or use coconut aminos for soy-free or omit
Instructions
Squeeze the jackfruit in between paper towels to remove as much liquid as possible. It is ok if it squishes.
Process with onion, garlic and jackfruit in a prcessor until coarsely shredded. Alternatively, finely chop the onion and garlic and finely chop/shred the jackfruit.
Transfer to a bowl and mix in the spices and sauces well. Preheat the oven to 350 degrees F.
Spread the mixture on a parchment lined baking sheet so its an even layer.
Bake at 350 degrees F for 35 to 40 minutes. Mix and spread after 20 minutes to move the center portion out. Also taste at this time for salt, heat and flavor. Adjust if needed and mix in.
Prep your tortillas. Add a good helping of the jackfruit mixture. Add cucumbers or other crunchy veggies. Add a creamy dressing like tahini dressing, or vegan ranch dressing or tzaztiki (See notes)
Notes
Additional spices to add, a good pinch of cardamon, black pepper and ground cloves.Add some chickpeas or beans to amp up the protein. Add more spices to preference. Mix 1 to 1.5 cups chickpeas with 1 tsp+ Berbere spice, 1/2 tsp garlic, 2 tbsp+ bbq sauce and salt and oil to preference in a bowl and bake on a separate pan or dish alongside the jackfruit. Easy Vegan Tzaztiki: Blend 1/4 cup silken tofu with a bit of water, good pinched of salt and garlic powder, 1 tsp or more lemon juice, blak pepper, good dashes of dried dill and/or mint, 2 ts olive oil. Taste and adjust flavor. Fold in some grated cucumber. Other dressing options: Tahini Garlic Sauce, Vegan Ranch.Nutrition is 1 of 3 serves, does not include dressing.
