This vegan tonkotsu ramen comes together in a single pot and is so easy to make! It has a spicy, creamy base and flavorful seared char siu tofu topping. Add whatever veggies and other toppings you like!

Start by making the seared tofu. Mix the marinade ingredients in a shallow bowl and coat the tofu slabs. Let it marinate for at least 5 minutes. Heat a skillet with oil, sear the tofu until golden brown, flipping and brushing with marinade for a caramelized sauce. Set aside and slice when cool.

For the ramen, use the same skillet with a bit of oil. Cook mushrooms until golden, then add ginger-garlic paste and jalapeño. Add miso, sesame oil, and sambal oelek, then 1/2 cup of broth to dissolve the miso. Add the rest of the broth, coconut milk, and salt. Bring it to a boil, then add noodles and cook to your preference (3-4 minutes for ramen, 7-8 minutes for udon). Add bok choy and cook for an additional minute.

Taste and adjust the seasoning, possibly adding a little maple syrup or brown sugar.

To serve, ladle the stock into bowls, add noodles and veggies, top with sliced tofu, green onion, jalapeño, sesame seeds, lime wedges, and chili oil or pepper flakes. Enjoy!
