Line a 9 x5 loaf pan with parchment and keep ready. In a non stick skillet, add the sugar, water, saffron and salt and mix over medium heat.

Bring the mixture to a rolling boil and stir until the sugar dissolves. Simmer for 2 minutes, then add almond flour and vegan butter, stirring to hydrate the almond flour with the sugar syrup.

Cook the mixture until it comes together and detaches from the pan's sides. Then, transfer the mixture to a parchment-lined loaf pan. Place another piece of parchment on top and spread and flatten the mixture using a spatula.

After removing the top parchment, press pistachios and almond slivers into the Burfi and use a knife to score it into pieces for easier slicing later. Chill the Burfi for 30 minutes, then use a sharp knife to slice it into portions and store.
