Found these yumm cookies at HellYeahItsVegan . I also made some crystallized ginger with tiny pieces using the recipe at the same site .. I made about quarter inch pieces of the ginger and they worked very well in the cookies. No need to cut the candied ginger! The remaining candied ginger and the ginger syrup got used for some gingery pancakes.. recipe coming up!

I used half the recipe, and my mixture was a bit more gooey, so the cookies dont have the cracked texture.. A bit less oil next time!!
