Delicious and easy oatmeal raisin almond butter cookies with cardamom. These cookies make a great, healthy snack or treat any time of the day. Vegan Recipe. #veganricha #vegan
 
Cookies! Yeah another set of them. These are oatmeal raisin with some almond butter and cardamom for flavor. You can use other spices like cinnamon, nutmeg, allspice, pumpkin pie spice etc. 
These cookies taste best for 2-3 days!

Oatmeal Raisin Almond Butter Cookies. Vegan

Delicious and easy oatmeal raisin almond butter cookies with cardamom. These cookies make a great, healthy snack or treat any time of the day. Vegan Recipe.

Ingredients

  • 2 tablespoons Raw turbinado sugar
  • 1.5 tablespoon agave syrup
  • 1 teaspoon flax meal
  • 1 tablespoon hot water
  • 1.5 tablespoon roasted almond butter (Homemade nut butter recipe)
  • 1 tablespoon vegan butter (earth balance Or Organic Canola Oil)
  • 1/2 teaspoon (0.5 teaspoon) lemon juice
  • 1/2 teaspoon (0.5 teaspoon) cardamom powder (less if u don't like cardamom much :, more if u love it)
  • 1/4 teaspoon (0.25 teaspoon) salt
  • 1/2 cup (72.5 g) raisins
  • 1/2 cup (40.5 g) oats
  • 1/2 cup (62.5 g) self rising flour (can be substituted by all purpose flour + 1/4 teaspoon baking powder)

Instructions

  • In a bowl, mix the flax meal and hot water and let sit for a minute.
  • Add in the softened butters(kept out for half an hour), sugar and agave syrup and mix well by hand or by hand mixer until the mixture feels light.
  • Add in the oats, salt, cardamom powder and lemon juice and a little flour(1/4 cup) and mix till just about combined. Add in more flour if needed to get gooey muffin mixture kind of consistency, Or a very sticky dough. If you added too much flour or oatmeal, add in a little oil and or lemon juice to make is gooey. (If the dough is stiff and not sticky, the cookies might come out too hard)
  • Oil hands or tablespoon and pick up tablespoon full dough, drop them and flatten on parchment paper. Thinner the better.!
  • Bake in preheated oven at 350 degrees F for 10-11 minutes(add minutes depending on the thickness of the cookie). The cookies should Not be runny or liquidy. They might look wet, but check with toothpick to confirm they are not squishy.
  • Take cookies off baking tray and cool on rack for a few minutes before burning your mouth!
  • Store in airtight container for a week or so. Let me know how yours turn out!

    Thanks for spreading the almond butter love. All of your recipes sound delicious, these cookies included. I love cardamom and add it to my coffee every morning. Now, I just need a cookie (or two) to go alongside my mug. 🙂
