    Cucumber Hummus Sesame Seed Mint Appetizer Bites. Vegan Glutenfree Recipe

    Cucumber Hummus Sesame Seed Mint Appetizer Bites.
     

    Who needs Deviled Eggs, when these bites come together in an instant, are healthier and funner. 🙂

    Slice the cucumbers on a diagonal plane to get an egg shape. Mix up the hummus with turmeric, nutritional yeast and kala namak. Pipe on the cukes, sprinkle seeds and mint and other small and pretty things like sprouts or what not. Serve!

    Make these for Easter, or any other party! Add other spices, flavors to the hummus. color it green with spinach, pink with beet juice, red with Sriracha or hot sauce. Top with other goodies, fresh herbs, seeds. Make fatter slices and remove some of the inside of the cucumbers for cucumber cups or deviled cukes!

    Cucumber Eggy Hummus Mint Sesame Seed Appetizer Bites
    Allergen Information: Free of Dairy, Egg, corn, soy, gluten, grain, nut, yeast, sugar. Can be made oil-free with oil-free hummus.

    Ingredients: Easily doubled multi-pled.
    1 Cucumber or Zucchini, sliced diagonally into 1/4 -1/2 inch slices
    1/2 cup hummus, store bought or home made (see here for recipe)

    1/4-1/2 tsp turmeric powder
    2 tsp nutritional yeast
    a generous pinch of kala namak (Indian black salt, for the eggy taste)
    a generous pinch of cayenne (optional)
    Sesame seeds, black or white for garnish
    mint or basil or cilantro leaves for garnish

    Method:
    Mix the hummus with the turmeric, nutritional yeast, kala namak and cayenne.
    Put into a pastry bag or ziplock and pipe onto sliced Cucumber.
    Sprinkle sesame seeds and dress with mint.
    Serve!

    Variations: Use sprouts, hemp seeds or other seeds, Sriracha as toppings. Add in garam masala, taco spice etc to the hummus. Color the hummus green with spinach, pink with beet juice, red with hot sauce/roasted red pepper. Make fatter slices and remove some of the inside of the cucumbers for cucumber cups or deviled cukes!



    Every year, global egg hatcheries destroy 6 Billion newborn chicks by suffocation, maceration (grinding up alive), electrocution or gassing — simply because they were born male. Males will not lay eggs and are not the breed used for meat.
    Eggs labeled organic and free-range, and even chicks sold to backyard chicken keepers, all have their origins in these hatcheries.

    Egg production is an intensive and depleting process for a hen. The unnaturally high rates of labor intensive, energy depleting egg production that modern hens are forced to sustain means that even on small farms and backyard chicken operations, is responsible for numerous disorders in hens, including often fatal diseases of the reproductive tract; osteoporosis and accompanying bone fractures; and, in some cases, total skeletal paralysis.

      These were amazing. I made them for Easter Coffee hour at church and people loved them. One person said, “These are like little jewels!” I couldn’t find little mint leaves at my grocery and I added a sprinkle of smoked sweet paprika to the tops. Delish!

      Thank you so much for the recipe. These look delicious! Our group comes together in the summer and again in the fall for an outdoor gathering, where everyone brings dishes to share. I am a vegan and am often stuck with the potato or pasta salad that I bring, and chips and dip. Next time I want to take an appetizer, salad and main dish so I won’t feel deprived. These look like just the thing. A good way to introduce vegan yummies to the unconverted too.

      I always aim to inspire, never to preach (although it’s tempting…)

      So fun and festive and colorful…no need for deviled eggs nor dyed eggs for Easter! Thanks for the recipe and the options to try too. I think after reading about that sweet goldenfeathered chickie that I want to find an animal sanctuary and spend the weekend just hugging little chicks. 🙂
