Neat foods sent me samples to review their mixes- Original, Mexican and Italian. The first awesome thing that you notice about them, is that the mixes are Soy-free and Gluten-free! The second cool thing is that there are wholesome, least processed ingredients like garbanzo bean flour, pecans, oats, and spices. Just add flax eggs, cook and you are good to go.

The mix taste and texture reminds me a bit of Sattu. Sattu is a flour mix made of roasted grams or peas and served up in savory or sweet dishes in some Northern parts of India. For the savory version, onions and veggies are added and some water to lump it up. That mixture can be served as is or filled into parathas. I am going to use the Neat mix to stuff Parathas or Naans too!

Chickpea/Garbanzo Bean flour is one of the main ingredients in all the mixes. The chickpea taste is discernible if you go looking for it :). There are is a lot of spices and flavors to mask it though, and you can add more spices, veggies to add to the texture and the flavors. 

I made Moroccan Spiced burgers with Neat original mix and added veggies and millet to it. I also made a Mexican filling with the Mexican mix with no additions. The taste of the mix grows on you and you can other cooked grains and beans and flavors to personal preference. With only flours, spices, no processed stuff and no soy or gluten, this mix is a keeper. 

Mexican scramble and served up with salsa, bun and lemon juice.

Steps:
Cook the neat original mix according to instructions with flax eggs. 
Add millet, onion, peppers and spices and mix well. 



Shape into patties and pan fry until golden. Look at these patties. they hold together so well.



serve up with your favorite toppings or some zesty yogurt, tomatoes and greens. 



Moroccan Neat Millet Burger with lemon cumin yogurt
Allergen Information: Free of dairy, egg, soy, refined oil. Patties are Gluten-free.
Makes 4 patties
Ingredients:
1 package original Neat Mix
2 flax eggs (2 Tbsp flax seed meal + 6 Tbsp water)
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp cayenne powder or to taste
1/4 tsp cinnamon powder
a generous pinch of clove powder and all spice powder
1/2 cup cooked millet
1/4 cup finely chopped red onion
1/4 cup chopped red bell pepper
1/4 cup chopped cilantro

Toppings:
Lemon cumin Yogurt:
1/4 cup non dairy yogurt or cashew cream
1/2 tsp lemon zest
1/4 tsp cumin powder
1/4 tsp salt

lettuce, onions, tomatoes and other toppings and dressing of choice
These Multigrain Burger buns or These Gluten-free buns

Method:
Cook the neat mix according to package instructions. Add flax eggs and cook in a pan for 6-7 minutes, breaking up the lumps. There is no oil added to the patties. 
Add all the spices, cooked millet, onion and pepper and shape into patties.
Grill or shallow fry the patties 3-4 minutes each side.
Mix the yogurt with lemon zest, salt and cumin powder and use to dress the burgers.
Add juicy tomato slices, onions or lettuce or other toppings.

Note: If you don’t have Neat foods mix, use a can of white beans and add the rest of the ingredients(millet, onion, spices and spices) and 1 flax egg. Mash and mix. Taste and add more of the spices listed. Shape the patties and bake at 400 degrees F for 20 minutes or pan fry to get a Moroccan spiced patty.
