A short and sweet post today.. Soft Stuffed French Toast with Blueberry Greek Yogurt!

My allergies are through the roof lately and you know why.. Its the crazy Seattle spring getting crazyier by the day! Day before yesterday, the weather went from sunny, to rain, to horizontal snow, wind, sunny again, hail, sunny, rainbow, snow, sunny within the hour and continued to be random all through the afternoon! And now its been oscillating between really cold, rainy and random short bouts of sunshine. Last week was a steady 50s, and this week I am back bundled up.
 
These french toasts are stuffed with So Delicious blueberry greek yogurt. To make your own yogurt at home, check out this thick and creamy Coconut milk yogurt from Lexie’s kitchen and this Oat milk Yogurt from Scandifoodie! Use some fresh fruit or fruit compote/jam with home-made yogurt for the filling. You can stuff these toasts with vegan cream cheese and thinly sliced and chopped fresh fruits too. I like yogurt though.. Less processed and all those good bacterial cultures.

To make life simpler, you can serve plain french toasts topped with the yogurt. Or use 2 slices with stuffing in between, but it gets tricky to flip them:). Use gf bread for gf French toasts. The other french toasts that we usually make are chocolate versions.. Who doesnt like some chocolatey things in the morning.
The breads that work well for this toast is any soft chewy bread loaf, or any of my whole grain Fruit Breads!

Stuffed French Toast with Blueberry Greek Yogurt

Ingredients 
 

  • 4 slices wholemeal bread, or gluten free

To Stuff

  • Blueberry Greek Yogurt

Batter

  • 1.5 Tablespoons finely ground Oats
  • 1 Tablespoon finely ground flax seed
  • 1 Tablespoon raw sugar or maple
  • a generous pinch of spices of choice, I usually add cloves, cinnamon and nutmeg
  • 1/3 cup warm water or almond milk
  • 1 Tablespoon organic canola , or coconut oil

Instructions 

To Stuff:

  • Slice the bread into thick slices. Make a deep cut in the middle as seen in the picture.
  • Stuff the filling(Blueberry Greek Yogurt) carefully so it fills up the cavity well.
  • Dip the slices in the batter and continue with the cooking.

Batter

  • Mix  Oats, flax seed, sugar, spices and warm water. Mix well and let sit for 5 minutes. Mix again, dip slices and pan fry them on medium-low, in a Tablespoon or so organic canola or coconut oil. 3-4 minutes each side.

Notes

Serve hot topped with maple syrup, or yogurt and fresh fruits, or toppings of choice.
For the Chocolate version: Add a teaspoon or more cocoa powder.
Quick version: Use 2 Tablespoons your favorite pancake mix(I use Bob's red mill 7 grain pancake mix), a teaspoon flaxmeal, add spices, sugar and 1/3+ cup water to make a thin batter and dip the slices.
