Millet Almond Oat Cookies with Chocolate chips. Gluten-free Vegan Recipe

I posted some deliciously crumbly Whole Wheat Chocolate chip cookies a few weeks back. I have been making a batch every other week and thought of trying out a gf version. So another keeper Chocolate chip cookie recipe came about.

These cookies have Pearl Millet(Bajra) flour and are spiced with ginger and molasses. You can substitute Bajra with any gluten free flour. I have made variation of these cookies a bunch of times with combinations of sorghum, rice, millet and/or nuts.
Millets, like sorghum, are predominantly starchy. The protein content is comparable to that of wheat and maize. Pearl and little millet are higher in fat, while finger millet contains the lowest fat. Millets are also relatively rich in iron and phosphorus. The bran layers of millets are good sources of B-complex vitamins. My millet flour collection has Pearl (Bajra), Finger (Ragi) and Sorghum(Jowar). Some of these grains and flours have a strong acquired taste. I use spices like ginger, cinnamon, allspice, cardamom etc to help mask the taste in cookies and bakes.

It was National Vegan Pizza day today. We consumed Pizza in some form or the other pretty much every other day this week. Today, we were planning to hit Pizza Pi in Seattle, but that plan got postponed to tomorrow. A bunch of Pizzas on the blog collection here.

This whole week hubbs is on vacation. And so am I :). I wasnt sure about the vacay, so have not planned any guest posts. I might be missing in action for a few. Regular post schedule and social media will be back by next week. I might be able able to sneak in a tricolor post. Lets see. Till then have an amazing week and a fun 4th!
Ingredients:
2 Tablespoons warm water
1 teaspoon flaxmeal
2 Tablespoon oil (I use 1 Tbsp each of organic canola and virgin coconut oil)
2 teaspoons agave syrup
2 teaspoons dark molasses (or agave/maple)
1/4 teaspoon ginger powder
pinch of salt
pinch of black pepper
2 Tablespoons ground raw sugar( 2.5 for sweeter)
1/2 cup ground Oats
1/4 cup pearl millet flour ( or any gf flour)
1/4 cup almond flour
1/3+ cup chocolate chips
Method:
In a bowl, add everything except the flours. Mix well for 2 minutes until well combined. Let sit for 2 minutes. Mix again for a few seconds.( to help the flax become gel-ish)
Add the flours and mix using spoon or hand to a dry dough.
Add the chocolate chips and mix to distribute.
Chill the dough for 15 minutes in the refrigerator.
Make flat balls and place on parchment lined baking sheet.
Bake in preheated 350 degrees F for 13-14 minutes.
Cool, consume!

I love the format of the show. The problem is defined with examples, a few interviews, some shocking statistics, then possible solutions with real life examples, and a call to action.
Of course each issue is really big in itself, but it is easy to get bogged down by the enormity of the problem and the statistics and very few articles or videos talk about present solutions. Please do watch and share!

Farmers are the first to see the harmful effects, since they and their families deal with higher concentration of the pesticides. There are increased rates of cancer and decline in health of the newer generation. One example, rural areas dont have bigger hospitals, so there is a train thatruns from one state to the the nearest Cancer center in another state. That train is called the Cancer train, because all the passengers of the train are either patients or family members. It is heart-wrenching to see the effects on young kids. And a reminder to us, that things like that can happen to the consumers too.
The solution is organic farming with crop rotation and use of age old methods to controls pests. There are examples of successful efforts which keep that ray of hope alive that all is not lost.

    Those cookies look wonderful! Is pearl millet like pearl barley? Or just a special kind of millet? I have made gluten-free baked good with millet flour before, and I often found the raw millet taste to be a bit overwhelming for me. Your recipe looks like I would have much better luck with the taste!

      Mihl, its a type of millet grain. All of the millet flours do have a distinct taste. But with the spices and the nuts, it barely comes out in the cookie, which is good thing for me too, since i am get thrown off by certain strong flavors too. Let me know when you give these a try.

    These look fabulous! I bet they would be perfect at the end pf the day with a cup of tea. I’ve never used millet flour before, but I do love millet bread from my local vegan bakery. They leave whole pieces in the bread, which provides a nice crunch.

    Thanks, Richa! I didn’t know that sorghum was a kind of millet. Do you get these flours at the Indian grocery? I was looking at your recipe for dosas and thought I might stop by Mayuri next time I’m near there to get some of the ingredients for that.

      Thanks Mary! I have the pearl millet and sorghum flour from mayuri and another sweet fine sorghum bob’s red mill. you will easily find all the dosa ingredients there. The whole black gram(Urad dal) and rice will be in the lentils and grains section and whole fenugreek seeds in the Spices section.

    this satyamev jayate episode was a shocking one, especially to see the kids and the cancer train… just could not get over it for some days.

    Thanks Richa, I love your recipes! I got one question regarding Pizza. Though I have been making vegan pizzas at home for sometime now, they still to the base a lot and become crispy from the bottom. My family likes the softer ones. I heard something about pizza screen recently. Do you know anything about it?

    Do you use any baking sheet for cookies? I get the same problem there. My cookies are hard or burnt from the base. Any idea? I am very new to baking world. I have just learnt how to use oven 6 months ago. Some baking tips would be great! May be you can write a post about baking basics using OTG for people like me! (just a suggestion!)

      hi Sejal, I use thick baking sheets for cookies. I have a regular oven, not an OTG, but similar principles apply.

      A few things you can do to avoid burning at the bottom
      -check the temperature calibration of the oven if possible. ovens can heat 50 degrees here and there causing over or underbaking
      - too much burning at the bottom means high temperature and/or over baking. Reduce bake time.
      - Use double baking sheets in case the heating of the oven is not well distributes(which i think happens in OTGs). for eg, when i bake glutenfree breads, i dont want a hard crust on them, so i use 2 bread pans, stacked on top of each other.

      Let me know if any of these help.
