This recipe for burnt garlic fried rice is packed full of flavor and makes for a perfect side dish for any number of main courses. Vegan Jump to Recipe
Fried Rice with Burnt Garlic
Ingredients
- 1.5 cups rice
- 3 cups water
- 1/2 cup chopped/sliced carrots
- 1/2 cup chopped green onions
- 1/2 cup chopped bell pepper
- 1/2 cup chopped green beans
- 2 tsp oil
- 4 cloves of garlic sliced
- 1 tsp soy sauce
- 1 tsp vinegar
- 1/2 teaspoon sugar
- some chopped coriander
Instructions
- Prepare rice in a rice cooker.
- In a large pan, add oil and let it get hot.
- Add the garlic slices and saute for a few minutes till the garlic stars turning brown. Let the garlic burn a little.
- Add the chopped vegetables and stir fry for a few minutes.
- Add egg and quickly scramble it. (optional)
- Add soy sauce, vinegar, sugar and the rice and mix well.
- Add salt if needed.
- Stir fry on high for a minute.
- Sprinkle some chopped cilantro and serve hot!

Amazing to see how you grew from these simple recipes to what you are doing today! Also surprised to see that your blog wasn’t completely vegan (” add egg”-optional). Anyways, cooked this for dinner yesterday and was a bit plain without any spices.
Its surprising to see a comment on the old posts. 2009 was the transition year to a vegan diet for us, so the blog was slowly transitioning then as well. I think the old recipes also arent necessarily accurate. I must have used a lot more soy sauce and garlic in this :). I havent removed them from the blog to redo some of the ideas as fresher improved posts.
You know, every now and then it is nice to have a simple but tasty recipe on hand, when you are to busy to cook, but still want a healty vegan meal. So I’m writing this down…
