The other day, we had a ton of Strawberries leftover and they were getting very ripe and squishy. Between the huge meals, snacks and abundant supply of fresh fruits of choice(mangoes, grapes, cantaloupes, watermelons, 3 types of berries), some fruit was bound to be forgotten. The strawberries not so much forgotten, but ripening because of accompanying us on beach trips in the warm weather, needed some attention sooner than expected. So I decided to whip up some Ice cream with them.
Dad isnt too fond of the raw berries because of the sour-ish notes. So I boiled these up into a quick syrup with some chunks, then added canned Coconut milk to it. The cooked berries get sweeter and Dad loved the chunks in the Ice cream! It was difficult to keep hubbs from eating the whole lot by himself.:). I dont have an Ice cream maker yet, so I froze the mixture as is and whipped it a bit twice in between. It doesnt get as fluffy as in the ice cream maker, but stays soft enough. Definitely a bit softer than some of the almond milk ice creams from the store ;).
I also made this with a cup of cashew milk and a cup of canned coconut milk.
Maybe I should get an Ice cream maker. I might be needing more ice creams this week while dealing with the empty house since my parents and bro and sis in law left….
Mom, Dad, Bro, Bro’s wife all left yesterday morning and hubbs, me and Chewie are all in a funk. Empty house, no plans to be made, no activity, no tea and snacks every 2 hours.. Chewie was sitting on Mom & Dad’s bed all afternoon yesterday with those sad eyes. I am not sure if he is missing them or enjoying the whole bed to himself. He looks sad though, I think he is definitely missing them.
It was an amazing month long somewhat vacation. I met my brother after 8 long years, Lots and lots of awesome Indian food, lots of talking(I was talking almost the entire day and that never happens :)), touristy things, so many huge toothy smiles and so much more. The other awesome part was that no one needed anything non-vegan. Thats the beauty of Indian food. The meals, snacks and everything that are cooked up at home are vegan by default or can be made vegan by elimination or very simple substitutions and without much change in taste.
Now to get back the scheduled blogging and pick up the to do list and also die of stress for Vegan Month of food. I haven’t decided if I can deal with that much craziness in September yet. Last year, I had 5 or 6 posts ready before the month even started and a another 6 or so ideas planned. this year I am thinking of something simple. Maybe just our daily dinner, or easy sandwiches or something.
Steps:
Chop up ripe strawberries and add to pan.
Mix with water, sugar and salt and bring to a boil. Mash the berries and simmer for another few minutes.
Add coconut milk+ arrowroot/cornstarch and bring to a boil.
Then mix in the remaining coconut milk. Mix well. Freeze.
Serve as soon as frozen.

Can i use maple syrup or agave instead of raw sugar for the berry syrup?
Also, i didn’t quite understand the coconut milk part.
“Add coconut milk + arrowroot. Then mix the remaining coconut milk”?
Meaning: Add a whole can of full fat coconut milk? + arrowroot. Then add 1.5 cup of cashew milk or coconut milk (carton coconut milk?)?
Richa
yes.
the arrowrrot ismixed in 1/4 cup of the coconut milk. So add that and then add the remaining coconut milk.

Is the calorie count correct/ 57 calories does seem a bit high!!
Richa
the widget calculates for the serves and the recipes says 2 serves.so that makes sense. The recipe actually serves 6 easily. then it will be about 200 cals per serve .i will update that.

I made it before you replied, and it is absolutely delicious! Now I don’t even care about the calorie count!

hi explain the full fat coconut milk ,i have 2 in my fridge ,do you shake it cause i heard it gets separated ,and you have to turn it upside down to open it,idk do i use the liquid part or just the top solid ? and can any milk be used i have ice cream machine just bought need more ice cream recipes, when will your book come out
Richa
The light coconut milk will be labelled as lite or light. Full fat coconut milk does separate, use all of it in this recipe. The separated white part is called coconut cream, which you use to make whipped coconut cream to top desserts etc. You can also use cashew milk in this recipe. Thinner milks as almond milk will make icy ice cream. Use coconut milk or cashew milk
maria shahriari
so dont use coconut cream in this recipe? i do want thick ice cream
Richa
I meant use the entire can, that would be coconut cream + the watery part. Use both.

Can Almond Milk be used as a substitute for Coconut milk?

Can Almond Milk be used as a substitute for Coconut milk?
Richa
sure, add a 1 Tbsp oil or nut butter to help add a bit of fat to reduce crystallization
Marie Roxanne
So if we don’t add the fat, it’ll be a “sorbet” instead?
Richa
it depends. if you let it freeze completely, then it will be hard as almond milk doesnt have enough fat. however you dont need the added fat if using an ice cream maker.

I am so h appy to hear you had an amazing time with your Fam Richa, you deserve all the happiness in the world! I totally think you should do the sandwiches for MOFO – you have some amazing sammies on your blog and I would love to see what you would come up with during an entire month!
Hannah
Clearly, I’ve fallen behind on my blog reading too. I don’t know what else could explain missing a gem like this recipe! I still can’t get enough ice cream, and I’d love to try your perfectly pink strawberry ice cream soon.

If so, I guess I can copy and paste.

I love my ice cream maker–it’s definitely a good investment, especially with recipes like this. 🙂 We live far from our families too and it’s hard sometimes!

I can understand why you all are feeling a little melancholy – how wonderful to have your family so close. From what I can tell, you make a sweet team.

Thank you Rika!

Hope you had a good time with your family. I recently bought an ice cream maker and the first one on my list is strawberry ice cream 🙂 I think of a recipe to make and its on your blog before I can do it…are you a mind reader?? Anyways, I decided to do Vegan MOFO this time and had my list made for Soups & Sandwiches. Cool, that you thought of making sandwiches too. Great minds think alike 🙂

Nice clicks and yummy ice cream
Caitlin
what a nice, long, overdue time to spend with your family. all of your meals looked amazing during that time(although they always do), and makes me wish i could pop down the street to indulge in dosas and dal with the family!
strawberry ice cream is one of my all time favorite flavors, and i love that this requires no ice cream maker. and cashew milk?! cannot wait to get my hands on some a that 😉
Richa
Yup. It was super awesome. Mom makes elaborate meals. the usual dal and dry vegges are always surrounded by salad, pickles and more.:) so i had to click the pictures!:) I make dal and subzi the same way some of the days of the week, but skip the salad sometimes or sometimes just add veggies to the dal. which doesnt always look as much fun.
i know right. there is a bit of aftertaste to the cashew milk, but it works perfectly in most uses!

Hey Richa, lovely icecream, neverthought it coudl be made vegan.. so simple no ?
A little question here ( and I know how silly it may sound ) – Since you have added cornstarch in this ice-cream, how exactly is it free from Corn then?
Doesnt cornstarch contain actual corn?
Richa
yes, cornstarch comes from corn. Use arrowroot for a corn-free version. updates the description:)
