Banana Oat Cashew Quick bread Bar. Vegan

Its a Banana quick bread bar! If you are wondering why you don’t see enough Banana recipes here, its because Hubbs is mildly allergic to Bananas. Some days I miss adding some banana to baked goods for that added moisture and natural sweet.

I like the usual nutty banana breads too, but they are usually crumbly and make a huge loaf. So I decided to grind up the nuts and add to the bread instead. This spicy bread got baked in a cake pan and holds well together, so you can just pick one slice up and munch on it without the mess, which is what I did walking around the house. I think the only other Banana recipe I have posted is the Banana Quinoa Oatmeal Cookie.
 
Use oats, sorghum or other gf flour to make it gf. It will be a more crumbly than this with gluten version, but the banana will hold it well together.

Banana Oat Cashew Quick bread Bar

Naturally sweet, these bars are great to enjoy anytime of the day. Vegan recipe full of flavor

Ingredients

  • 1/4 cup (32.25 g) ground raw Cashew
  • 1/3 cup (27 g) ground Oats
  • 1/3 cup (40 g) whole wheat pastry flour
  • 1/4 cup (31.25 g) all purpose flour or spelt or wheat pastry flour
  • 2-3 Tablespoons (2 Tablespoons) cooked Quinoa or any cooked small grain
  • 1 very Ripe Banana
  • 3 Tablespoons raw sugar or equivalent sweetener
  • a pinch of salt
  • 1/4 teaspoon (0.25 teaspoon) vinegar
  • 1/4 cup (62.5 ml) water or almond milk
  • A generous pinch of ginger nutmeg, cloves and cinnamon powder
  • 1 teaspoon baking powder

Instructions

  • In a bowl, add chopped banana and mash it well.
  • In another bowl mix/whisk the flours and baking powder well.
  • Add the water/almond milk, vinegar, sugar, salt, spices to the banana mash and mix well.
  • Add the flours and mix till just about combined.
  • Drop batter on parchment lined or greased 8 inch cake pan.
  • Even it out and Bake at preheated 360 degrees F for 30-35 minutes or until toothpick from the center comes out clean.
  • Cool on rack before slicing.

Some news, Puppy mills will be banned from another Southern Cal city. A couple of cities have already passed this ordinance. I would hope that they ban all kinds of breeding operations including pure breed breeders. Though there might be a few good breeders, a majority get sidetracked by other interests. Recently, a property of an AKC judge in WA, who is also a well known “reputable” breeder, was discovered to have a basement full of “pure breed” dogs which were not up the mark, for reasons as idiotic as misaligned teeth. Those poor pups were living in a dark dank basement in tiny cages, without enough food water or any interaction and were infested with diseases and half of them had developed mental problems. It was a horrible sad video.
 
That tells you how we can never know how reputable or whatever a breeder really is. Please Adopt from a shelter. 6 millions pets are euthanized each year in the US, including very adoptable pure breeds and puppies, that is 1 pet killed every 8 seconds.

    oh I love this! It sounds delicious and unlike banana bread, the delightful aroma will only taunt you for 35 minutes as opposed to the usual hour! It’s also nice that it only uses one banana. giving up three bananas for a bread sometimes irritates me.
    Will definitely make this soon.

    Yummm! Banana flavoured baked goods have always been a favourite of mine, and I think that the cashews probably add such a good extra punch in these! Man, I haven’t baked in so long. I just may have some bananas lying around too.

    one more bread collection of yours which i have bookmarked to make. again had this post come one day before, i would have made it.

    all the ripe bananas i used, to make the sweet appams yesterday. did not take pics etc, so no post of the appams.

    this bread looks delicious. i love the contrast of the warm brown crust to the light, inner bread. it looks so moist, too. you are the bread queen.

    I would be lost if I was allergic to banana’s – what would top my peanut butter english muffin!

    I love the looks of these bars and the ingredient list sounds so good 🙂

    Puppy Mills are one of the saddest operations – it is so nice to hear that somewhere, someone is putting an end to it

    i am sensitive to banana too after i ate a bad one a few years ago. ever since, my body reacts to it!!! 🙁 but i LOVE bananas. this bar looks fabulous especially with the cashews in them!

      Yes you can leave out the cashews – just add 4T more of 1 or all of the flours or ground oats.
