Hubbs has been loving snacks that are decadent and more like dessert like these no bake cookie dough bites!.And these brownie bites fit the there just perfectly! A Mix of nuts make up the base for a rich fudgy snack with a good amount of cocoa. Dates are the binder and sweetener. The bites mixture takes just 5 mins and then shape them as you like into balls or bars. Add toppings of choice and snack for the energy boost or for when you want a lighter brownie!

Ingredients for Raw Vegan Brownie Bites
- Raw Cashews make a fudgy neutral base Use macadamia nuts or more walnuts as a substitute
- Walnuts add the nutty brownie flavor and volume.
- Lightly toasted coconut adds a caramel undertone to these fudgy balls.
- Soft dates are the sweetener. a pinch of salt balances the sweetness. Don’t like dates, then use a mix of 2 tbsp maple syrup and 2 tbsp or so coconut sugar/brown sugar, you might need to add some flour(oat, regular or almond) if the mixture is too sticky.
- Good quality cocoa makes these brownies incredibly delectable. I use dutch processed for a more chocolatey flavor.
- Coat these balls with hemp seeds, cocoa powder, coconut or chia seeds
- Variations: Add 1/4 tsp instant coffee. Add a few drops of vanilla extra or vanilla bean paste for additional flavor. Add a tbsp of hemp seeds with the nuts for additional protein.
How to make Raw Vegan Brownie Bites
First, you want to powder the nuts so that they are a fine meal and done add too much texture to the bites. Add the nuts and coconut to a processor and process until the nuts become an even fine meal.
Add the cocoa powder and process again to combine well. Add the dates and salt and process again until the dates have broken down and mix well. It will take a minute. The dates will break down then the mixture will become doughy.
If the dates are dryer, process them so they break into small pieces then remove from the processor, then add the nuts.
Use a scoop to take portions of the dough and roll into a ball. Press the ball in toppings of choice. Store refrigerated for weeks or freeze for even longer.

Raw Vegan Brownie Bites (grain free)
Ingredients
- 3/4 cup (96.75 g) raw cashews
- 3/4 cup (87.75 g) walnuts
- 2 tbsp shredded coconut , preferably lightly toasted
- 1/4 tsp salt
- 1/3 cup (28.67 g) cocoa powder plus more for rolling, I use dutch processed
- 12 soft dates (any medium to large soft dates. Use 11 to 12 depending on size)
- 2-3 tsp hemp seeds or coconut or cocoa powder or chia seeds for coating
Instructions
- Add the nuts and coconut to a processor and process until the nuts become an even fine meal.*
- Add the cocoa powder and process again to combine well.
- Add the dates and salt and process again until the dates have broken down and the mixture is homogeneous. It will take a minute. The dates will break down then the mixture will become doughy. If there are pieces of dates visible, then push the dough down and pulse and process again. Check If the mixture is sticky enough, if not then add a tsp of oil or maple syrup and pulse.
- Scoop portions of the dough to roll into balls. Press the balls in bowls of hemp seeds, coconut or chia seed, or cocoa powder to coat.
- Store on the counter for upto 3 days. refrigerate for upto 3 weeks or freeze for upto 2 months.

I’d like to try these but I was wondering if the amount of walnuts was correct? In the picture the amount of walnuts and cashews looks the same but in the recipe you have a LOT more walnuts. (3.4 cups). Is this correct or should it be 3/4 cups?

yes, you can add in towards the end so that there are streaks of peanutbutter in the balls

Just omit coconut. Coconut flour will make them too dry.

I subbed a lot but kept the basic structure of the recipe using homemade crunchy almond butter instead of walnuts, hemp hearts instead of cashews, roasted chestnuts instead of coconut, and the rest the same, subbing raw cacao for the cocoa- they turned out beautifully- dark, rich, decadent and delicious.
