St Patrick’s Day is coming up on March 17 this year. I remember almost a decade ago when I was in Chicago, there was celebration in the air and green in the river in March. I mean, the river was green, bright and greeny green. I wasn’t too adventurous enough in terms of food back then. Blogging has definitely helped me be adventurous and creative. My Irish recipe repertoire is slowly increasing. Meanwhile, here is a collection of some Irish and some Green Recipes.

    Spinach chickpea omelets?! Avocado naan?! Tempeh tikka masala?! Palak tofu “paneer”?! May I just say that this is probably one of the best recipe roundups you’ve ever done, Richa! All of these recipes look beyond incredible!

    I enjoyed making as well as eating most of these recipes, but the ultimate one was the Vegan Grilled Cheese. I’m now very confident in making vegan sandwiches.
