    Individual Glutenfree Vegan Pumpkin Pies – how cute would these be on your Thanksgiving table this year?

    The pumpkin pie filling is silky–smooth thanks to soaked blended cashews and packed with flavor thanks to the winning combination of pumpkin and warming pumpkin spices. I am sure these individual vegan gluten-free pumpkin pies will become a new, welcome addition to your holiday table.

    The pumpkin pie filling is naturally sweetened with dates! This is a less sweet pumpkin dessert so make sure to use pure unsweetened pumpkin puree, not sugar-laden pumpkin pie mix.

    While traditional pumpkin pie recipes rely on cream, sweetened condensed or evaporated milk, our vegan pumpkin filling gets its thick creamy texture from raw soaked cashews blended with some plant-based milk.

    These mini pies are SO GOOD. Honestly, it’s probably for the best to make these individual tarts or you would probably eat the whole pie all by yourself!

    Mini Vegan and Gluten-Free Pumpkin Pies - Date Sweetened

    Ingredients

    For the crust:

    • 1/2 cup (60 g) oat flour certified gluten-free if needed
    • 1/2 cup (56 g) almond flour
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1.5 teaspoons flaxseed meal mixed with 1.5 tablespoons of water(flax egg)
    • 7-8 soft dates pitted

    For the pumpkin filling:

    • 1 cup (245 g) pumpkin puree not pumpkin pie mix
    • 1/4 cup raw cashews soaked in hot water for 15 mins, then drained
    • 9-10 dates soaked in hot water for 15 mins
    • 2 teaspoons cornstarch
    • 1/8 teaspoon salt
    • 1/2 teaspoon vanilla extract
    • 1 teaspoon pumpkin pie spice
    • 1/4 cup Non dairy milk such as almond, oat or light coconut plus 2 tablespoons

    Instructions

    • For the crust : Add the dates to a food processor and process until the dates break down into a soft doughy mixture. Then add in the oat flour, almond flour, salt, and cinnamon, and the flax egg and process until the mixture becomes a crumbly mix.
    • Check by pressing the mixture to see if it sticks to each other or not. If not, then add in a few drops of water or if you are okay with using oil, then add in a few drops of oil and process again until the mixture makes fat crumbs and easily sticks together when pressed.
    • Transfer this mixture to your greased mini tart or pie pans and press well evenly. Then put the pie crust to bake at 350 degrees Fahrenheit(180c)  for 12 minutes.
    • Make the pumpkin pie filling : Soak the cashews and dates in hot water if you haven't soaked them already for at least 15 minutes. Then drain and add to a blender. Add the rest of the ingredients and process until the cashews and dates are evenly blended up and mixed into the pumpkin puree mixture.
    • You can add in a few teaspoons more non-dairy milk if the mixture is not blending well. Taste and adjust sweetness if desired with some cane sugar or 1-2 more dates. The mix will get sweeter on baking, so let it be less sweet.
    • Remove the crust from the oven then add pumpkin pie filling in all of the pies and even it out. Then put them back in the oven to bake.
    • Check at 25 minutes if the center is set non-jiggly otherwise you can bake for another 5 minutes. Then remove the pans from the oven.
    • Let cool completely, chill for atleast an hour and then top with your favorite whipped coconut cream or a vegan vanilla ice cream topping and serve.
      Store refrigerated for upto 3 days. Or freeze.

    Notes

    • No dates: If you don't like the dates, then you can replace the dates with maple syrup in the crust. Add 1-2 tablespoons of maple syrup and omit the flax egg. Add enough maple syrup to help bind the crust.
      For no dates in the pumpkin pie filling, add about a 1/4  cup of maple syrup and only 2 tablespoons of milk and blend. If the mixture needs more moisture for blending, add in more non-dairy milk, 1 tablespoon at a time.
    • For regular flour Pumpkin pie see myVegan Pumpkin Pie with Rustic Crust or pumpkin pie bars 
    • Nut-free : omit the cashews from the filling and use 1/3 cup coconut cream and 2 tbsp non dairy milk instead of 1/4 cup. For the crust: use all oat flour or a gf blend, add 2 tbsp vegan butter.
    • 9 inch pie pan: Double the crust and the filling. Bake the crust for 15 mins and with filling for 45 mins or until center is set. chill for 3 hours

    Ingredients:

    •  the crust is made with a mix of oat flour and almond flour
    • cinnamon is added for flavor and salt to intensify the taste
    • dates are added for sweetness and to help bind the crust ingredients together
    • as an egg substitute for the crust, we use a flax egg made from flaxseed meal mixed with water
    • for the pumpkin pie filling, you need pure unsweetened pumpkin puree, not pumpkin pie mix
    •  the filling gets its thick creamy texture from raw soaked cashews blended with some plant-based milk
    • instead of sugar, we add some dates to the filling. To soften them, soak them in hot water for 15 mins
    •  cornstarch helps firm up the filling while baking
    • it would not be pumpkin pie without a hefty dose of pumpkin pie spice and vanilla extract in the filling

    Tips:

    • serve these vegan gluten-free pumpkin pies as they are or top them with coconut cream!
    • you want to blend the pumpkin filling until the cashews are completely smooth for the best texture. I soak the cashews in warm water but you can soak them in cold water in the fridge overnight.
    • if you do not have pumpkin pie spice you can make your own by blending 1/2 tsp cinnamon with 1/8 tsp each of ground ginger, nutmeg, cloves, and cardamom.
    • these taste best chilled so make sure to make this recipe ahead of time to allow for some time for chilling

    How to make Gluten free Vegan Pumpkin Pie

    Can I make this pumpkin pie recipe without dates?

    No dates, no problem: If you don’t like the dates, then you can replace the dates with maple syrup in the crust. Add 1-2 tablespoons of maple syrup and omit the flax egg. Add enough maple syrup to help bind the crust.

      Any chance you’ve tried this in cupcake tins? Don’t have mini pie pans but like the individual idea.

        I have not made this recipe in cupcake tins, but you can certainly try. Cupcake wells tend to be smaller so you will likely need to adjust the proportions accordingly.

        You can sub with potato starch or arrowroot powder. But note that this will affect the taste.

      I thought I had almond flour but I don’t, what can I use instead? I have cassava flour, chickpea flour, King Arthur baking mix, King Arthur 1 for 1 flour, King Arthur paleo flour which is almond, coconut and cassava blend?

        Almond coconut cassava blend is your best bet . Others will be too dry

      Thank you for the timely recipe, I would like to make this rather than buying a GF pie for Thanksgiving. Wondering what you would suggest to replace Oat Flour? I have allergy to oats. Also could the dates be replaced with coconut sugar and if so how to you substitute measurements?

        You can use more almond flour or a gf blend.

        For the crust, use 2 tbsp coconut sugar and add another flax egg (1 tbsp flax plus 2.5 tbsp water ) or 2 tbsp oil
        In the filling use 1/4 cup sugar instead of the dates

      This looks great. I wonder if the recipe would work if the ingredients could be put in a single 9 inch tart pan. I don’t have any individual tart pans and have no more room in my kitchen for more equipment. And would of course wonder about baking times and such. Thanks

        Double the crust and the filling. Bake the crust for 15 mins and with filling for 45 mins or until center is set.

          I am using the same measurement as for the 4 mini tarts but doing a 6 inch pan. I think I started conv baje mode initially by mistake and gave it 45 mins. But it was still all liquid in the middle. I realized at 55 mins and changed to normal baking mode and kept adding 5 mins for about 20 mins now and now when I take the pan out it doesn’t wiggle but it sounds like the mixture is bubbling under the top layer. I checked with a stick it still seems wet inside. What am I doing wrong?

            Did you drain the dates? Also at that much time the pie shoulve started to burn on the edges. I feel like there’s something going on with your oven ie it’s not heating properly
