Pumpkin Spice Nog Pancakes. Vegan Recipe

October 30, 2013 By Richa 20 Comments

Pumpkin Pie Spice Nog Pancake Spiders

Happy Halloween!

Make these Spideys for breakfast! Use a ladle or a ziplock baggie or a squirt bottle. I just used a ladle and a spoon to make the legs. Use mini chocolate chips or seeds to make the eyes. πŸ™‚

So Delicious sent me a few of their holiday Beverages and the culinary coconut milk. The first thing I opened up was the Nog. Me and hubbs drank a bit. Hubbs finished his and decided it is decent and I left mine as I couldn’t take the strong nutmeg flavor. Disclaimer though that I have never had the real nog in my life. :). The only way hubbs is going to finish it is with a good dash of rum, and that is not going to happen during the weekday. So I decided to use up some in a batch of Pancakes. With the abundant nutmeg already in the nog, I added up the rest of the Pumpkin Pie spice ingredients and voila, a spiced up fall pancake that I could devour.

A few of the pancakes got made into Spiders with mini chocolate chip eyes. Creepy Pumpkin Spice Pancakes
How do you like your Nog?

So Awesome right. You can get a copy right now here. Where else will you find Rasmalai, Gulab Jamun, Mysore Pak, Laddoos, Sandesh, Burfis all Vegan-ized! And to think that I was going to drop the idea for not believing in myself enough.

I cannot keep thanking you all enough for spreading the word and buying the Ebook. This week The Ebook is touring blogs, where you will be able to get a recipe or two, read reviews and enter Giveaways for a copy! Links to all the Giveaways and Blog tour schedule can be found on at the bottom of the Ebooks page!

The Ebook has since gotten mention on Our Hen house and several of you have reached out to me about the successful recipes. Diwali festival is on November 3rd, so I am trying to get it out there before then. Please do share if you can and please bear with me with the repeated mentions. πŸ™‚

I’m going to try these tomorrow!!

What Indian Food recipe would you like to see veganized?

I would like to see Jalebi, Kathi Rolls, Samosa, and Lassi veganized!! My mom says those are her favourites and I would love to try them too- but only if they’re vegan!

I have Jalebi on the blog, Samosa is pretty much vegan if you use vegan butter in the pastry instead of ghee. Lassi can be made with vegan almond milk yogurt. πŸ™‚ just blend with sugar, some mango puree if you have it and a pinch of cardamom.

Cutest pancake ever. You’ve got some serious skills because I would have given up after making a mess of the first leg. I really want to try that nog, I usually buy the Vitasoy one but I find it’s pretty thin, and from what I remember, egg nog is way thicker. Not sure how I’d feel about the stronge nutmeg taste though, I like it, but I don’t like when it’s overpowering.

I am not one for “egg nog” but Justin loves it, I bought him the Pumpkin Spice and it was quickly gone; I definitely would make a go of it in these pancakes, but you already know I am a pancake girl through and through πŸ™‚
